As the summer sun casts its golden glow over the rolling hills of Burgundy, I've had the pleasure of bringing my passion for seasonal flavours to life in new and exciting ways.

As the summer sun casts its golden glow over the rolling hills of Burgundy, I've had the pleasure of bringing my passion for seasonal flavors to life in new and exciting ways. This season has been a whirlwind of unforgettable events that have allowed me to share my love for local ingredients with guests in some truly unique settings.

Celebrating Summer

One of the highlights was cooking in the vines with the wonderful Hautes-Cotes team, where I set up a pop-up kitchen amid a picturesque vineyard. Surrounded by lush grapevines, guests savoured dishes inspired by the very terroir around them — fresh tomatoes bursting with flavor, vibrant herbs, and local cheeses paired perfectly with the region’s finest wines. There is something magical about cooking outdoors, with the earth underfoot and the scent of summer in the air, that adds an extra layer of connection to the ingredients.

What a joy to be able to share all the wonderful produce and its story available at our doorstep in the most stunning locations.

A Season of Culinary Adventures

From the vines, I moved on to a series of fine dining events in more intimate settings. Each evening was a celebration of Burgundy’s summer bounty, with carefully crafted multi-course menus that reflected the season's peak. Guests enjoyed dishes like pan-seared fish with a lemon beurre blanc, garnished with micro-greens and edible flowers, or slow-cooked meats accompanied by roasted summer vegetables and delicate sauces that captured the sun’s warmth.

To close out the season, I hosted a lively amuse-bouche party, a gathering where the focus was on small bites packed with big flavours. It was an evening of creativity, where I experimented with combinations. These little tastes were designed to surprise and delight, providing a true celebration of summer's finest ingredients in just a few bites.

Reflecting on these events, I am reminded of why I love what I do. It’s about more than just creating dishes; it’s about crafting experiences that bring people together around a shared table. As we transition into autumn, I’m excited to continue this journey, exploring new ways to highlight the rich, diverse flavours of each season.
